
Saw Suncore Foods make these adorable Flamingo🦩Meringue Lollipops. I had to try them, vegan style They are super easy to make and require only a few ingredients. They melt in your mouth like cotton candy, only they're much healthier. 😉
Ingredients
- 1/2 c Aquafaba (juice from chickpea - my fave is 8 Tracks )
- 1/8 tsp Cream of Tartar
- 1/2 c Sugar
- 1 tsp Natural Pink Food Coloring like Suncore Foods Pink Pitaya
Directions
1. Beat aquafaba and cream of tartar for 1 minute.
2. Slowly add in sugar and beat until stiff peaks form (about 10 minutes).
3. Add in pink food coloring. Beat for 30 seconds until well blended.
4. Preheat oven to 200 degrees. Fill pastry bag with large tip (Ateco 806) and meringue batter
5. Gently squeeze in backwards "S" shape on lined baking sheet.
6. Squeeze a little dollop and place lollipop stick on top.
7. Fill second pastry bag with star tip (Wilton 1M) and meringue batter. Gently pipe rosette and finish to the right with a tail.
8. Add natural nonpareil sprinkle for eye.
9. Bake for 2 hours until dry and firm.
