So go ahead and whip up a batch of these St. Patrick's Day Spinach Cupcakes.
Ingredients
- 2 c King Arthur’s GF Flour Blend
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 6 c Organic Spinach
- 2 tsp Vanilla
- 4 tbsp Monkfruit Sugar
- 1/4 c Avocado Oil
- 3/4 c Plant-Based Milk
- 1/4 c Organic Applesauce
Directions
- Preheat oven to 350F. Place cupcake liners in pan.
- In large bowl, whisk together flour, baking soda and salt.
- In blender, puree spinach, vanilla, sugar, oil, applesauce and milk.
- Add to dry ingredients. Stir until just combined.
- Pour into pan and bake for 20 minutes.
- Cool in pan for 8 minutes and move to wire rack.
- Finish with vanilla buttercream and natural gold sprinkles. I used a 104 tip to make the 4 leaf clover.
