Pumpkin Granola Muffins

Stop spending $4 for a pumpkin muffin at the bakery and make your own. These are vegan and refined sugar-free.


  • 1/3 c melted coconut oil

  • 1/2 c maple syrup

  • 2 flax eggs (2 tbsp flaxseed meal + 6 tbsp water set for 5 mins)

  • 1 c pumpkin puree (rich in Vitamin A, iron and fiber)

  • 1/4 c plant-based milk (I used my homemade organic oat milk)

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 2 tsp pumpkin pie spice

  • 1 3/4 c whole wheat flour

  • 1/3 c organic old-fashioned oats plus extra for sprinkling on top


  1. Preheat oven to 350 degrees and coat muffin pan.

  2. In large bowl, beat together coconut oil and maple syrup. Whisk in flax eggs and then pumpkin puree, milk, pumpkin spice, baking powder and salt.

  3. Add flour and oats and whisk together. Using a large cookie scoop, scoop batter into muffin pan.

  4. Bake for 20 minutes. Cool in pan for 8 minutes before moving to cooling rack.

Makes 12 scrumptious muffins. Enjoy!
