Immune Boosting Cake

It's winter which means germs are running rampant. I like to load up on fruits, veggies, supplements and a slice of this Immune Boosting Cake. The immune-boosting ingredients are lemons which are rich in Vitamin C, an antioxidant that helps remove free radicals that can cause damage in our bodies. It also has Turmeric, rich in Curcumin which is an anti-inflammatory compound. To improve absorption of Turmeric, I added a dash of black pepper which contains piperine. 

Lastly, there is Greek Yogurt for some good probiotic gut health. It's a sweet way to stay healthy this season. 

Ingredients

  • 1 ½ c unbleached all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground turmeric
  • Dash of pepper
  • 2 lemons
  • 1/3 c sugar
  • 3/4 c low fat Greek Yogurt
  • 2 large eggs
  • 1/2 c melted coconut oil
  • 1/2 c confectioner's sugar
  • 5 tsp milk of your choice
  •  

    Directions

    1. Preheat oven to 350 degrees. Spray 6" pan with nonstick spray and line with parchment paper.
    2. In a large bowl, whisk flour, baking powder, salt, turmeric and pepper.
    3. Grate zest from 1 lemon and squeeze 2 tbsp lemon juice in a small bowl. Cut up remaining lemon into quarters to decorate cake. 
    4. Mix lemon juice with Greek yogurt and eggs and then add in lemon zest sugar mix. Stir together.
    5. Add wet ingredients to dry ingredients. Add in melted coconut oil. Transfer to pan and bake for 30 minutes. 

    6.  Cool in pan for 8 minutes and moving to cooling rack to cool completely.

    7. Combine confectioner's sugar with milk and drizzle on top. Decorate with  lemon wedges and fresh basil.

      Feel good about eating cake!
