These cheap and easy Protein Bars are the perfect snack for kids' lunch boxes. They are nut-free, gluten-free, vegan and dairy-free. Packed with protein from Sunflower Seed Butter and Organic Old-Fashioned Oats, plus potassium from Bananas. Throw in dark chocolate chips for antioxidant protection that your kids will love.
🌿Ingredients
- 1 15-oz can Chickpeas
- 2/3 c Plant-based Milk (I used homemade Organic Oat Milk)
- 3 small ripe Bananas
- 2/3 Sunflower Seed Butter (or nut butter if no allergies)
- 1/4 c Maple Syrup
- 1 tsp Vanilla
- 4 c Organic Old Fashioned Oats
- 1/2 c Dark Chocolate Dairy-Free Chips plus more for sprinkling on top
⭐Directions
- Line 9x9 square baking pan with non-stick spray and parchment paper. Preheat oven to 350.
- In food processor, process chickpeas, milks, banana, sunflower seed butter, maple syrup and vanilla until smooth.
- Transfer to large bowl and stir in organic oats. Add in dark chocolate chip and scoop into baking pan. Level with spatula.
- Sprinkle on more dark chocolate chips and bake for 40 minutes.
- Cool in pan for 5 minutes and move to cutting board to cool. Cut into 12 squares.
