Chocolate Chip Organic Oat Pulp
What do you do with the leftover pulp from homemade Organic Oat Milk? Turn it into make Chocolate Chip Organic Oatmilk Pulp Cookies (vegan/ dairy-free/ gluten-free). The pulp is rich in protein and fiber. 
Here's how to make it.

- 1/3 c Organic Old-Fashioned Oats (certified gluten-free if necessary)
- 1/3 c Organic Oat Pulp
- 1/2 c Organic Oatmilk
- 1/4 c Avocado Oil
- 1 tsp Baking Powder
- 1/2 tsp Cinnamon
- 1/4 tsp Sea Salt
- 1/2 c Brown Sugar
- 1 1/2 c Flour
- 1/2 c Dairy-free Chocolate Chips like @enjoylifefoods

1. Preheat oven to 375 degrees and line pan with parchment paper or silpat.
2. In a large bowl, whisk together organic oats, organic oatmilk pulp, avocado oil, oatmilk and vanilla.
3. Adding baking powder, cinnamon, salt, brown sugar and oat to the bowl. Mix until combined.
4. Stir in flour and add chocolate chips.
5. Using 1 inch cookie scoop, scoop dough onto pan. Bake for 11 minutes.

Makes 20 scrumptious chewy cookies.
