Apple Cider Pancakes

Anyone else loving that it’s Apple Cider season? 🙋🏻‍♀️🧃Apple cider contains polyphenols, which are compounds in plants that act as antioxidants to protect the body against cell-damaging free radicals. These Apple Cider Pancakes are super easy to make plus they are dairy-free, gluten-free, vegan AND no added sugar. What they’re not free of is FLAVOR. 😋Save this recipe and whip up a stack of yummy, plant-based pancakes.🥞

🌿 Ingredients

1 c Reduced Apple Cider (boiled down from 2 c Apple Cider)
1 c Plant-based Milk of your choice
1 tbsp Lemon Juice
2 Flax Eggs (combine 2 tbsp Flaxseed Meal + 6 tbsp warm water and let sit for 5 minutes)
4 tbsp Avocado Oil
2 tsp Vanilla
2 c Gluten-Free Flour Blend
1 1/2 tsp Cinnamon
2 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
1 Organic Apple diced and steamed (for about 10 minutes)

     

    Directions

    1. In a medium mixing bowl, combine apple cider, plant-based milk, lemon juice, flax eggs, avocado oil and vanilla.
    2. In a large bowl, whisk together flour, cinnamon, baking powder, baking soda and salt. Add wet ingredients and stir to combine.
    3. Heat pan or griddle over medium heat. Scoop out 1/4 cup of batter. Cook pancakes on first side for approximately 4-5 minutes. Flip and cook for another 2 minutes.
    4. Remove pancakes, stack and top with steamed apples. Sprinkle with cinnamon.
